Rich amber colour. Mildly spicy with banana nut bread aromas. Medium-to-fullbodied palate with robust toffee, roasted nuts, sugared butter and brown spice flavours. Very smooth with unbelievable mixability.
Truly unique and handcrafted production not seen anywhere else on Earth. They utilize open top fermentation to allow the interaction between production yeast and the naturally occurring yeast present on the island. Distilled using a Coffey continuous column copper still that has been modified from 2 columns to 4 in order to lower the total height and thus be more resistant to hurricanes. The spirit is rectified using a French Sevalle still commissioned in 1966 and aged using once used bourbon barrels. Finally, the rum is blended in oak vats that are as old as the company to take advantage of the flavours produced there over time.
