A brand inspired by a legend. Aztec legend attributes the origins of agave and the creation of pulque to the fertile goddess Mayahuel. When Mayahuel eloped with the feathered snake god, Quetzacoatl, the star demons descended to earth in pursuit. The lovers disguised themselves as a tree but Mayahuel was discovered and she fell to the wrath of the demons. Agave plants sprang forth from the sacred field where she was laid to rest. From their milky sap, the gods created pulque which they gave to Quetzacoatl as a gift to comfort. Distilled using artisanal methods and produced and packaged with the utmost respect for the environment. DISTILLERY Today, 123 uses artisanal, small-batch distillation. Every bottle is individually hand blown, signed and numbered by hand. Annual capacity of one million litres. Estate bottled. FIELDS High-altitude plantations in the valley of Amatitan. Farmed sustainably since the dawn of agriculture. Iron-rich red volcanic soils impart minerality (Tierra Roja). COLLECTIVE MAKING PROCESS Made from 10-year-old-aged Agave. Heart of the plant is roasted in a stone oven for 24 hours, then cooled for another 24 hours. Juice is extracted and is fermented for 72 to 96 hours. This then through 2 stages of distillation.
